4 Months Later


It has been a busy four months for us.

Saturday

We went out to one of our favorite eateries last weekend, The 1029 Bar. I ate a Shrimp Po' Boy and Yanni had a Lamb Sandwich...yum.  Afterwords we went for a walk around St Anthony Main-it was a beautiful night!

Cookie

Cookie had a near death experience last week after she ate 7oz of unsweetened baking chocolate while I was away running some errands. After one emergency visit to the vet and some drugs, she has made a full recovery. Thank goodness.

Camping

Yanni and I went on our first camping trip together to celebrate our two year anniversary last weekend. We went to Baker Park in Maple Plain. 

All this for two nights!



It was a nice weekend..we spent a lot of time relaxing by the campfire.Yanni taught me a new Greek card game called Kseri-it's a fun game.

Graduated!


I graduated on Saturday! We took a quick trip down to Chicago to attend the commencement and celebrate. This was our first trip back to the windy city since we moved and it was exciting to be back.  After the ceremony we went to  Sun-Wah BBQ and enjoyed a duck dinner-yum! 


The weekend flew by and I am sad it's over : (

Strawberry Rhubarb Jam

I finally got around to checking something off my bucket list: making strawberry jam ( and since the rhubarb is tasting amazing I decided to use that too). I've wanted to try canning since last summer..and especially after I started following this blog. I enjoyed the process and shout out to Mom for the help!

Boiled the pectin, lemon juice, strawberries, rhubarb and {LOTS} of sugar. Then ladled the jam into the jars.


Cans processed for 11 minutes

Tried the new jam on a piece of buttered bread...yum!

Now onto canning tomato sauce, apple sauce, apple butter and maybe a few other recipes :)

Rhubarb Crisp

I made rhubarb crisp yesterday. We have been using the recipe for years and it never gets old.   I love making this dessert.


Grab enough rhubarb to have about 4 cups once sliced. Cut off each end, wash and dice. 


Mix rhubarb with tapioca, sugar, cinnamon and nutmeg

make the "crisp"(butter, flour and brown sugar)

Spinkle the crisp over the rhubarb and let bake for about 30 minutes

And Voila! You get a very yummy dessert.It also goes nice with a scoop of ice cream :) Tastes like summer.
